A few simple questions about inputs

Hi everybody, i'm new here ;)
A few simple questions about inputs :

Do 1 Stereo input = 2 Mono inputs ?
Are Mono inputs sensitive to piezo velocity ?

About MIDI :
If 1 Stereo MIDI channel = Left and Right.
Is it possible to assign Left->Snare, and Right->Kick ? (for exemple)

Precision, i'd like to build a Megazen (~Zendrum) instrument.
It's why i don't need dual zone sensitives pads (stereo), but mono inputs by hitting bottles tops.

A few people on this forum actually built such instruments using MegaDrum. You can get 55 mono inputs plus HiHat controller input with MegaDrum.

One piezo goes to the tip and the sleeve, another piezo goes to the ring and the sleeve. The sleeve (ground) is common for both piezos.

Ah, perfect !
That sound logical, but i don't have any electronics knowledge, so i just ask ;)
Now i just have to find a nice case for the DIY zendrum, i'll watch out others threads about building one.
