One of the SN74HC4851N multiplexers on my Synthex v2.8 board broke down and none of the places I
checked has them in stock and the minimum order qty is at least 1000. (I tried HEF4051BP, but they didn't work at higher input signals; there was a crosstalk between the channels even with only one input connected)

Can I use the ones from Dmitri's part list instead?

4051 ICs won't work in Synthex's PCB because they don't have injection and ESD protection.

You could use this http://uk.farnell.com/jsp/search/produc ... tid=439872 and make SOIC-2-DIP adaptor.
You can this http://gb.mouser.com/Search/ProductDeta ... 252bv1M%3d

Out of curiosity, how did one of these breakdown? I ask because I'm wondering if I should have spares on hand for such a disaster.

I have no idea. It happened when I was assembling the whole thing and I was connecting the encoders. Although I didn't notice, but maybe I shorted some parts. On one channel it continuously displays a maximum level and transmits MIDI.

Check for a short to Vcc on this channel.
